Kyuri aka the Japanese Cucumber has a beautiful dark green skin, it’s long and slender compared to a normal cucumber. The Japanese Kyuri is also sweeter, its inner flesh is crunchy, tender, and succulent simultaneously. It is high in vitamin K, and contains vitamin C, magnesium, potassium, manganese, vitamin A, riboflavin, and calcium. Cucumbers are best eaten raw as part of salad or garnish, but it is also popular in soups, stews, juiced, and pickled.
